A bright, briny gin cocktail inspired by the windswept southern coastline, the Coastal Breeze pairs Gindu Coastal Gin with native saltbush and fresh lime for a long, refreshing highball that captures the salt-sprayed air of the Australian shore.

Tasting notes

The first sip is all coastal air - crisp soda, a clean snap of lime, and the savoury, herbaceous lift of saltbush syrup carrying the gin's juniper through. Gindu Coastal Gin sits at the centre with its soft saline edge and lingering green-pepper warmth, while a dash of orange bitters pulls everything into something bright, balanced and dangerously easy to drink. Light enough for a long afternoon, complex enough to slow down for.

Ingredients

  • 45ml Gindu Coastal Gin
  • 20ml Fresh Lime Juice
  • 15ml Saltbush Syrup
  • 60-90ml Soda Water (to top)
  • Dash Orange Bitter
  • Garnish: Saltbush Sprig + Lime Peel
  • Glassware: Highball
  • Ice: Lots (this one likes it cold)

Method

  1. Add Gindu, Lime Juice & Saltbush Syrup into a shaker with ice.

  2. Shake hard for 10 seconds (to chill & wake up botanicals).

  3. Strain into a highball glass, top with soda and add orange bitters. 

  4. Stir & add garnishes.

 

Saltbush Syrup - slowly heat 1 cup sugar, 1 cup water until fully dissolved. Add 20ml ground saltbush (or a handful if fresh) and simmer gently until the volume has reduced by roughly one third. Remove from heat and strain through a muslin cloth. Store in fridge in a sterilised jar.
