Billy Smores Cocktail
Inspired by campfire nights under the Australian sky, the Billy Smores is a classic
take on the smores around the campfire, created by the team at Bar Clara. It's built with Gindu Billy Tea Gin, a distinctly Australian spirit, a “bush cuppa” that captures native bush botanicals within a billy boiled over open coals. Wattleseed syrup deepens those roasted, nutty notes, a squeeze of lime keeps it fresh, and a dash of chocolate bitters nods to the classic campfire treat. Finished with a toasted marshmallow garnish, this Billy Tea Gin cocktail is pure bush nostalgia in a glass, perfect for cooler evenings and slow nights outdoors.
Tasting notes
Warm, toasty and indulgent. Gindu Billy Tea Gin brings botanical, tannic notes, lifted by the roasted, caramel-like sweetness of wattleseed syrup. Chocolate bitters add a moreish cocoa richness, while a touch of lime cuts through to keep every sip balanced. Stirred over a single large block of ice and crowned with a toasted marshmallow, it drinks like a grown-up campfire smore: comforting, complex and just sweet enough.
